African Peanut Soup

amazing recipe. Easy to prepare and low calorie. So much flavor

Ingredients

  1. 1 onion chopped
  2. 10 oz can condensed tomato soup
  3. 14 oz low sodium chicken broth or water
  4. 1 tsp red curry powder
  5. 1 tbsp canola oil
  6. 1 pinch fresh chopped cilantro
  7. 1 salt and pepper to taste
  8. 2 tbsp peanut butter (creamy or crunchy)

Method

  1. In a medium sauce pan heat oil over medium heat
  2. Add chopped onion and cook until soft and fragrant about 1 min
  3. Mix in red curry powder and stir frequently 3 to 5 min
  4. Cover with condensed tomato soup and chicken broth Bring to simmer
  5. Add peanut butter and cilantro stir until mixed well
  6. Turn heat off and add salt and pepper to taste
  7. Serve immediately and enjoy
