Asian Beef and Noodle Soup

Based upon recipe my wife found in Family Circle magazine

  1. 2 1/2 lb beef short ribs
  2. 1 white onion
  3. 4 clove garlic
  4. 2 inches of ginger
  5. 2 tbsp rice vinegar
  6. 1 tbsp Chili paste
  7. 2 tbsp Hoisin sauce
  8. 1/3 cup soy sauce
  9. 7 cup beef broth unsalted
  10. 1 1/2 cup fresh chopped mushrooms
  11. 9 oz udon noodles
  12. 1 head bok choy
  13. 1 cup chopped green onions
  14. 1 cup chopped cilantro
  1. Cut short ribs into small cubes Cut white onion into thin slices Mince garlic Thinly slice ginger
  2. Add ribs onion garlic ginger vinegar Hoisin sauce Chili paste and 3 tablespoons of soy sauce to slow cooker and mix
  3. Add beef broth and put cooker on high 6 hours
  4. 15 minutes before end of time add mushrooms and start water boiling for noodles
  5. Boil noodles for 2 minutes then add bok choy for an additional 2 minutes Drain
  6. Add remaining ingredients and reserved soy sauce to slow cooker Sour stir Serve
