Bacon Cheeseburger Soup

My sister begs me every year to make a pot of this soup.


  1. 1 lb ground beef
  2. 1 small onion chopped
  3. 3/4 cup celery chopped
  4. 1 cup shredded carrots
  5. 1 tsp dried basil
  6. 1 tsp dried parsley flakes
  7. 3 cup chicken broth
  8. 4 tbsp butter divided
  9. 4 cup potatoes diced
  10. 1/4 cup all-purpose flour
  11. 16 oz Velveeta cubed
  12. 1 1/2 cup milk
  13. salt
  14. pepper
  15. 1/4 cup sour cream
  16. BACON!


  1. Brown beef in pan drain and set in pot you will cook soup in
  2. In same pan saute carrots onions celery basil and parsley until tender in tbsp of butter About 10 minutes
  3. In the same pot as the beef add veggies broth and potatoes bring to a boil
  4. Reduce heat and let simmer for 10 minutes
  5. In a small skillet melt remaining butter Add flour Stir for 3-5 minutes on medium heat until bubbly
  6. Add to soup bring to a boil Stir for 2 minutes
  7. Reduce heat to low Add cheese milk salt and pepper Stir until cheese melts
  8. Remove from heat Blend in sour cream
  9. Fry up bacon until crispy Crumble and stir into soup
