Baked Mac and Cheese with tomatoes

This is good with pepper jack cheese as well. Any of your favorite cheese would work.


  1. 1 box campenelle pasta or elbows shells etc (I love the way camponelle looks in this dish)
  2. 8 tbsp butter
  3. 2 tbsp flour
  4. 2 1/2 cup milk
  5. 4 oz cream cheese (half a block)
  6. 2 cup sharp cheddar
  7. 2 cup mild cheddar and colby blend
  8. 2 heirloom tomatoes sliced (I found them at Walmart!)
  9. 1 cup panko bread crumbs


  1. Cook the pasta according to the box directions and drain
  2. Melt 4 tablespoons butter add flour stirring to make a roux
  3. Add milk stir until thickened
  4. Add cream cheese stir to melt
  5. Add the rest of your cheese reserving about a cup for top stir until melted
  6. Butter a glass baking dish add the pasta and pour over the cheese sauce Mix well
  7. Top with remaining cheese
  8. Change Lay the sliced tomatoes over the cheese(I sprinkled salt and pepper over the tomatoes)
  9. Melt the rest of the butter mix in bread crums
  10. Sprinkle over the tomatoes
  11. Bake at 350 for about 30 minutes uncovered
