Beef Enchiladas

I always double my recipe because everyone I make these for absolutely loves them! (NOTE: Using flour tortillas will make the enchiladas soggy!! They ll still taste good, but very soggy texture! That s why it calls for corn tortillas instead.)

  1. 1 lb Ground beef
  2. 1 medium onion chopped (1/2 cup)
  3. 1/2 cup sour cream
  4. 1 cup shredded cheddar cheese
  5. 2 tbsp parsley flakes
  6. 1/4 tsp pepper
  7. 1/3 cup chopped bell pepper
  8. 2/3 cup water
  9. 1 tbsp chili powder
  10. 1/2 tsp dried oregano
  11. 1/4 tsp ground cumin
  12. 2 Green chilies (optional)
  13. 1 clove garlic (finely chopped)
  14. 15 oz can tomato sauce
  15. 8 or more corn tortillas
  1. Preheat oven to 350°F Fahrenheit
  2. Cook beef and onion til beef is brown drain
  3. Stir in sour cream cheese parsley and pepper Cover and remove from heat
  4. In 2 quart saucepan heat remaining ingredients to boil them simmer 5 minutes
  5. Microwave tortillas to ensure they roll without tearing then dip each tortilla into sauce mixture (cover both sides)
  6. Spoon about 1/4 cup of meat mixture into tortilla roll up Continue with the others
  7. Place seam down into an oven safe baking dish
  8. Pour remaining sauce over enchiladas Cover with cheese
  9. Bake 20 minutes or until cheese is bubbly
