Beef Enchiladas

This makes for a good, hearty meal. Everything comes together quickly, making it a good recipe for busy weeknights. Serve alongside your favorite rice.

  1. 1 tbsp olive oil
  2. 1/2 onion diced
  3. 1 small bell pepper diced
  4. 1 clove garlic minced
  5. 1 lb ground beef
  6. 1/2 cup salsa
  7. 1/2 cup canned black beans drained and rinsed (optional)
  8. to taste chili powder cumin cayenne pepper
  9. to taste salt and pepper
  10. 1 can enchilada sauce (could use 1 1/2 cup homemade)
  11. 2 cups shredded cheese divided
  12. 8 medium sized flour tortillas
  13. Suggested Toppings:
  14. ·shredded lettuce
  15. ·diced tomato
  16. ·sour cream
  17. ·diced avocado
  18. ·sriracha
  1. Heat the oil in a large skillet over medium heat Add the onions and peppers and cook until onions are tanslucent about 3-4 minutes Add the garlic and cook a minute or so more until fragrant Add the ground beef and cook until browned breaking it up as you go
  2. Change Drain the excess grease from the meat if needed then add the salsa and seasonings to taste along with a splash of water or broth If using the black beans add them to the skillet now Let simmer for about 5 minutes on medium heat
  3. Preheat oven to 350°F Grease a large baking dish with deep sides Set aside
  4. Change Add a large spoonful of beef mixture and a sprinkle of cheese in the center of each tortilla and wrap the tortilla up with both ends closed
  5. Change In the prepared baking dish pour half of the enchilada sauce and swirl to coat the bottom Place the rolled tortillas in seam side down and top with the remaining enchilada sauce Sprinkle with the remaining shredded cheese Bake covered with foil in the oven for 10 minutes then remove the foil and bake an additional 10 minutes
  6. Change Serve immediately as is or topped with whatever toppings youd like (some suggestions listed in the ingredient list) Refrigerate any leftovers
