beef enchiladas

not for dieters!

  1. 1 1/2 lb ground beef
  2. 1 lb cheese
  3. 1 tsp comino
  4. 1 tsp salt
  5. 1 tsp pepper
  6. 1 chopped onion
  7. 1 can enchilada sauce
  8. 1 packages corn tortillas
  9. 1 vegatable oil
  1. preheat oven to 350°F
  2. cook meat with salt pepper comino and onion til meat is brown draining excess oil
  3. add enchilada sauce
  4. add handful of cheese
  5. continue to heat until cheese is melted
  6. in separate pan heat tortillas in oil until soft dont over cook they will get crispy
  7. put tortillas on a plate let excess oil drip
  8. using a baking pan get one tortilla put the meat sauce mix in roll seam side down
  9. do this until u have desired amount or pan is full
  10. cover enchiladas with remaining mix and cheese
  11. put in oven for 25 minutes until cheese is melted
