Beef Meatballs bathed with Veggies Sauce

Thinking of my friends …The North….the snow and cold….this recipe came to me. Delicious alternative to serve meatballs. Enjoy.

  1. 1/2 stalk celery
  2. 1/2 tsp pepper
  3. 1 tsp dried onion
  4. 3 cloves garlic
  5. Chicken stock
  6. 3 cloves roasted garlic
  7. 4 ripe tomatos
  8. 1 tbsp mediterranean oil (canola-olive-grape seeds)
  9. 14 large beef meatballs
  10. 16 oz diced tomatoes can
  11. 1 pinch turmeric
  12. 1 pinch cumin
  13. 1 tsp dried onion
  14. 16 oz can of chick peas drained
  15. chicken stock and water as needed
  16. 1 cup baby carrots
  17. 6 potatoes size of a baseball
  18. 1 cup diced pumpkin
  1. Blend the 6 first ingredients on the list plus the tomatoes Covered with chicken stock
  2. In the pan that you will cook this recipe pour the oil and heat at medium setting Add the blended seasoning mix for one minute
  3. Change Add the meatballs saute I used the pre-cooked ones It is much faster than making them from scratch and there are great ones in the market
  4. Change Add the carrots chicken stock (I used home made) Water as required to obtain the desired consistency potatoes tomatoes chickpeas
  5. Taste an add turmeric and cumin to taste Lower heat setting and cook until vegetables are soft when done add a sprint of fresh oregano and turn off the heat Wait 10 minutes before serving
