Beef, Mushroom & Barley Soup

This is a very easy but is very flavorful:)

  1. 1 tbsp of olive oil
  2. 1 beef shortribs
  3. 1 lb of mushrooms sliced
  4. 1 salt amp pepper to taste
  5. 2 whole carrots cut in half
  6. 1 whole unpeeled large onion
  7. 2 ribs of celery cut in half with leaves on
  8. 1 tbsp fresh thyme
  9. 2 cup barley
  1. Heat olive oil in a stock pot add beef brown on all sides Season with salt amp pepper
  2. Add mushrooms carrots celery amp onion add broth season with salt amp pepper add thyme
  3. Bring to boil then turn down heat to medium low Cook until beef ribs are cooked
  4. Add barley cook until tender
  5. Reason with salt amp pepper if needed
  6. Enjoy
