Beef Tripe Sandwich

As a kid my mom made these often. The tripe was canned back then. This is made from fresh and clean tripe. Another childhood memory I wanted to share with yall.

  1. 8 ounces beef tripe
  2. 2 quarts water more if needed
  3. 1 tablespoon salt
  4. 4 slices bread
  5. 1/3 teaspoon salt
  6. 1/4 teaspoon ground black pepper
  7. As needed oil to fry in
  8. 2 teaspoon mayonnaise
  9. 1 teaspoon yellow prepared mustard
  1. Boil the water with 1 tablespoon salt
  2. Change Wash and clean the tripe if needed
  3. Change Put into pot and boil 30 minutes
  4. Simmer for 3 hours add water if it gets to low
  5. Change When 3 hours is up take it out of the liquids and let cool Get the oil hot
  6. Change Add salt and pepper
  7. Change Dredge in flour Shake off excessive flour Let rest for 4 minutes
  8. Change Fry in oil 4 minutes per side I turned mine about 4 times you want to get this crunchy on the outside
  9. Change Move to paper towels to absorb excessive oils
  10. Toast the bread
  11. Add mayonnaise and mustard to taste
  12. Add tripe and serve
