Blueberry and buttermilk breakfast cake

My kids love picking berries and blackberries also work for this yummy breakfast treat


  1. 1/2 cup unsalted butter
  2. 2 tsp lemon zest
  3. 2/3 cup sugar
  4. 1 each egg at room temp
  5. 1 tbsp vanilla
  6. 2 cup flour but set aside 1/4 c toss with berries
  7. 2 tsp baking powder
  8. 1 tsp salt
  9. 2 1/2 cup fresh blueberries
  10. 1/2 cup buttermilk


  1. Preheat oven 350┬░ Cream butter with zest and sugar until light and fluffy
  2. Add egg and vanilla mix untilcombined
  3. In seperate bowl toss berries in 1/4c flour and in another seperate bowl whisk together remaining flourbaking powder and salt
  4. Add flour mix to sugar mix a little a time alternating with buttermilk and then fold in berries
  5. Grease bread loaf pan or 9 square baking dish Spread batter in pan and sprinkle with sugar
  6. Bake 35 mins check with toothpick it might take another 10 mins Cool at least 15 mins before serving
