Bread n Butter Pudding with Dates

My mum always made this for wintery Sunday lunches

Ingredients

  1. 8 slice multigrain bread
  2. 3 slice white bread
  3. 5 large eggs
  4. 1/2 cup milk
  5. 1 butter
  6. 1 cup caster sugar
  7. 1/2 cup dried dates
  8. 1 tsp vanilla extract
  9. 1 cream

Method

  1. Preheat oven to 180 (350/360)
  2. Remove crusts from all bread and butter each slice on one side
  3. Cut bread into triangles and place in a baking dish butterside up
  4. Sprinkle 3/4 sugar liberally all over buttered bread
  5. Chop up dried dates and sprinkle amongst the bread pieces
  6. Beat eggs and milk together add vanilla extract
  7. Pour over bread and dates do all pieces are soaked
  8. Cover and allow to stand for around 10 mins so that the bread absorbs the liquid
  9. Bake in oven at 180 (350/360) for around 30 – 35 mins or until golden brown
  10. Sprinkle remaining sugar on top
  11. Serve with cream
