Caramel Apple Walnut Cake

Classic winter cake in our house.


  1. cake:
  2. 1 1/2 cups vegetable oil
  3. 2 cups sugar
  4. 3 eggs
  5. 3 cups flour
  6. 1/4 tsp ground gloves
  7. 1 tsp ground cinnamon
  8. 1/4 tsp ground nutmeg
  9. 1 tsp bicarb soda
  10. 1 tsp salt
  11. 1 cup coarsely chopped walnuts
  12. 3 cups Macintosh apples peeled and cut into small pieces
  13. 1 tbsp (or more!) spiced rum
  14. Icing:
  15. 150 g butter (room temp)
  16. 150 g confectioners sugar (icing sugar)
  17. 150 g caramel sauce (or make your own!)


  1. Preheat oven to 325F/160C butter and flour 2 8inch (or 20cm) pans
  2. Beat oil and sugar until thick Add the eggs 1 and a time beating well after each
  3. Sift together flour spices bicarb soda and salt Add this into the egg mixture and blend
  4. Add the nuts apples and spiced rum and fold well
  5. Pour the batter into the buttered pans and bake about 1hour 10minutes or until a toothpick comes out clean when poked
  6. While the cake is baking make the icing Beat the butter until soft Beat in the icing sugar about a tablespoon at time Beat in the caramel sauce and taste test!
  7. When the cake is completely cool spread the icing evenly over all the cake! Top with walnuts and some caramel for a bit of an extra touch
