Caramelized Red Onion Garlic Bread


  1. 1 small baguette havled lengthwise
  2. 1 red onion small dice
  3. 4 cloves garlic minced
  4. 1 stick butter room temperature
  5. as needed olive oil
  6. as needed kosher salt amp black pepper


  1. Preheat oven to 400º
  2. Heat enough olive oil to coat the bottom of a medium sized saute pan
  3. Add red onion with a pinch of salt Saute on high heat for 1 minute Reduce heat to low Cook for approximately 20 minutes or until onions are caramelized Stir occasionally Add more olive oil when necessary to prevent burning
  4. Add garlic during last minute of cooking
  5. Remove from heat Cool rapidly in fridge or freezer until onion mixture reaches room temperature or below
  6. Combine butter and onion mixture in a mixer or food processor Add a drizzle of olive oil and a pinch of salt and pepper
  7. Mix until butter is fluffy and onion mixture is spread evenly about 1 minute
  8. Spread butter on each half of the baguette
  9. Bake for approximately 8 minutes or until bread is crispy
  10.
