Cheeseburger Soup

A great, simple soup with a stick to your ribs kind of feel to keep you warm on the coldest of days ahead. The sour cream adds a nice tangy note that really ties everything together. I would list a number of servings, but it doesn t matter… they all come back for more. 😉

  2. 2 tbsp butter or olive oil
  3. 1 small onion – finely chopped
  4. 2 small carrots – diced to 1/4 in pieces
  5. 2 medium Russet potatoes – diced to 1/4 in pieces
  6. 2 cup chicken broth or stock (may need up to 3 cups)
  7. 4 cup milk
  8. 1 lb Velveeta – cubed
  9. 8 oz sour cream
  10. 1 salt – to taste
  11. 1 ground black pepper – to taste
  12. 1/2 tsp garlic powder (optional)

  1. In a 3quart pot over medium heat add ground beef salt pepper and garlic powder(if desired) Crumble and brown beef until no longer pink Drain using colander and set aside for later
  2. In same pot melt butter add carrots and onion Cook until onion is translucent about 5 minutes
  3. Add potatoes to the pot Pour in chicken broth/stock to just barely cover veggies Increase heat to med-high bring to boil Cover reduce heat to medium cook at a low boil for 15 minutes or until potatoes are fork tender
  4. When potatoes are tender return beef to pot Stir in milk and Velveeta cubes
