CHINESE DUMPLING SOUP (MEE HUN KUEH)

A SMOOTH AND SILKY CHINESE PASTA……..

Ingredients

  1. plain smooth dumpling
  2. 3 cup flour
  3. 1/2 cup water
  4. water for smoothing the dumpling
  5. 1 plate of water
  6. garnish
  7. 1 bunch fried dry anchovies
  8. 1 bunch blanch brocoli stem
  9. soup
  10. 1 pot of stock
  11. 1 dash light soy sauce and pepper

Method

  1. TO MAKE DUMPLING DOUGH
  2. Change mix flour with water add bit by bit till flour is till dough is soft water might not use finish set aside cover with cloth for half hour minimum
  3. Change TO MAKE DUMPLING
  4. in pot of stock bring to a boil then simmer down
  5. pull a hanful of dough then with one wet hand pull thinly dumpling dough and put into pot of stock
  6. this way the dumpling will be smooth and slippery
  7. Change add seasoning and gently stir dumpling once or twice so that soup will clear off heat and serve top garnish
