Choclate babana bread cupcakes

Inspired by chocolate covered katie


  1. 1/2 cup milk of choice i used drinking coconut milk
  2. 1/2 cup mashed overripe banana
  3. 3 1/2 tsp coconut oil
  4. 2 1/2 tsp pure Vanilla Extract
  5. 2 tsp Apple cider vinegar
  6. 3/4 cup flour of choice i used Wholemeal Spelt Flour
  7. 1/2 cup granulated sugar of choice i usee coconut sugar
  8. 1 tsp stevia Extract
  9. 1/4 cup cacao powder
  10. 1/2 tsp baking powder
  11. 1/2 tsp baking soda
  12. 1 pinch salt
  13. 1/2 cup chopped walnuts Optional


  1. Preheat oven to 350°F Line 12 muffin tin holes
  2. In a medium bowl mix banana oil vanilla and vinager Set aside for 5 min
  3. In a large bowl combine all remaining ingredients and stir well
  4. Our wet into dry and stir until evenly mixed
  5. Portion the batter evenly among muffin tins Add to oven and bake for 20 to 25 min Until toothpuck inserted into the center comes out clean
  6. Place on a cooling rack and allow to completely cool
