Corned Beef and Cabbage

**This is a good stew … next time I will be sure to have some carrots to put in it!

  1. 2 large onions sliced
  2. 1-3/4 lb lean corned beef brisket trimmed
  3. 4 carrots cut into 2 quot pieces
  4. 4 all-purpose potatoes peeled and cut into 2 quot pieces
  5. 2 fresh thyme sprigs
  6. 1-1/2 lb head green cabbage cored and cut into wedges
  7. 1-1/4 c reduced-sodium chicken broth
  8. 1 tsp dry mustard
  1. In 5- or 6-quart crock pot layer onions beef carrots potatoes thyme and cabbage Pour broth over cabbage then sprinkle mustard on top
  2. Cover and cook until meat and veggies are fork tender 4-5 hours on high or 8-10 hours on low
  3. Transfer beef to platter and cut into 16 slices Place veggies around meat
