Creamy Acorn Squash Soup

A dear friend of mine gave me this recipe. I love fall and nothing says fall like creamy, warm, fragrent soup. This is sure to hit the spot on a cold or rainy day. So fresh and flavorful.


  1. 2 acorn squash
  2. 5 clove garlic
  3. 1 onion chopped
  4. salt/pepper
  5. 8 cup chicken broth or stock
  6. 1 tsp ground cinnamon
  7. 1 tbsp lemon juice
  8. 1/4 cup to 1/2 cup heavy cream or half n half


  1. Preheat oven to 400
  2. Cut squash equator side up and remove seeds and membranes
  3. Face up on baking sheet brush with olive oil and sprinkle with salt and pepper Bake for 60 min
  4. Halfway through saute garlic and chopped onion until garlic is slightly brown and onion translucent
  5. Add broth and bring to a boil over med
  6. Add cinnamon
  7. When squash is done scoop out and add to broth Let boil for about 15 more min
  8. Put in a blender or use a hand blender Blend to the consistency you prefer Add lemon juice cream and enjoy
