Cucumber and asparagus soup

So very good hot or cold


  1. 1 1/2 cup fresh chopped asparagus
  2. 6 cup grated and chopped cucumbers
  3. 2 cup plain yogurt
  4. 2 quart vegetable broth
  5. 1/3 cup fresh chopped dill
  6. 1/3 cup fresh chopped parsley
  7. 2/3 stick butter
  8. 1/3 cup chives
  9. 2/3 tsp salt
  10. 2/3 tsp granulated garlic powder
  11. 1/2 tsp rubbed sage


  1. Change Take butter and asparagus and fry in a deep pan
  2. Add garlic amd salt cover and simmer
  3. Change Add the broth after 7 minutes of simmering add cucumbers
  4. Change Add the yogurt after the cucumbers are bubbling stir well add chives parsley sage and dill cover
  5. Stir after the soup bubbles cover cook 3 minutes remove from heat you can serve or chill serve cold I served with cheese and buttered croutons
