Dairy-free bread: pain de mie with bread maker

Makes a light 1 lb loaf with crispy crust. Adapted for Panasonic SD-BMT-1001.


  1. 250 g Flour
  2. 17 g sugar
  3. 5 g salt
  4. 6 g goat milk powder (optional)
  5. 15 g vegan butter (Earth Balance Buttery Sticks)
  6. 180 g chilled water
  7. 1/2 tsp dry yeast


  1. Secure mixing paddle in bread maker pan
  2. Weigh out sugar salt goat milk powder and vegan butter onto a small plate and set aside
  3. Weigh out flour directly into bread maker pan
  4. Add ingredients from Step 2 to flour
  5. Weigh out water into a cup and pour carefully into bread pan along the edges
  6. Place bread pan into bread maker
  7. Add yeast to yeast compartment and start pain de mie cycle (~5 hours)
