Dark Chocolate Banana Bread Muffins


  1. 1 3/4 cup four
  2. 1/4 cup Hershey special dark cocoa powder
  3. 1 cup sugar not brown
  4. 1 tsp baking powder
  5. 1/4 tsp baking soda
  6. 1/4 tsp salt
  7. 2 large eggs
  8. 1/2 cup butter melted
  9. 3 large ripe bananas
  10. 1 tsp vanilla extract


  1. Preheat oven to 350°F
  2. Spray muffin tin with non-stick cooking spray
  3. In large bowl whisk flour cocoa powder sugar baking powder baking soda and salt
  4. In medium-sized bowl combine mashed bananas eggs melted butter and vanilla
  5. Lightly fold wet ingredients into dry ingredients until just combined and batter is thick and chunky
  6. Bake about 10-15 minutes until bread muffins have risen and toothpick inserted comes out clean
  7. Pour batter into prepared muffin tin
  8. Sprinkle with powdered sugar
  9. Serve warm or at room temperature
