Delicious Meat Samosa

A Saudi recipe for samosas: phyllo dough stuffed with a mixture of beef, peas, carrots and spices.

  1. 60 phyllo dough sheets
  2. 1 kg ground beef
  3. 2 onions chopped
  4. 400 g green peas
  5. 2 carrots grated
  6. 9 tablespoons parsley chopped
  7. 1/2 teaspoon allspice
  8. 1 teaspoon turmeric
  9. 1 teaspoon cayenne ground
  10. 1 teaspoon salt
  11. vegetable oil
  12. salt and pepper to taste
  1. Fry the onions with 5 tablespoons vegetable oil until tender then add in the ground beef and season with pepper and salt Mix and cook till the meat turns brown
  2. Add in the green peas carrots parsley allspice turmeric cayenne and salt along with 2 tablespoons of water and stir Simmer for 15 minutes remove from heat and leave asideThis is the filling
  3. To do the samosi: cut the phyllo sheets into 6 cm wide strips
  4. Put a tablespoon of filling 1 cm from the bottom of the phyllo stip Take one of the bottom corners and fold over the filling to form a triangle Continue folding while maintaining the triangular shape till the end of the strip
  5. Repeat the process for the remaining sheets and filling
  6. Fry in heated oil till the samboosak are golden
  7. Serve hot
