Double – Fried Shredded Beef

I had this dish back in 1994 when I was studying in Brisbane. I used to go to my favourite chinese restaurant in Fortitute Valley. 17 years later I came back to Brisbane and found out that the restaurant has been closed. I tried to discontracted the recipe and finally after many attempts I found a recipe for this dish! happy days!

  1. 500 g beef eye fillet
  2. 2 tsp oil
  3. 2 tbs water
  4. tsp cornflour
  5. 2 tbs cornflour extra
  6. 1 large carrot
  7. Oil for deep frying
  8. Sauce:
  9. 1 tbs oil
  10. 1 green shallot sliced
  11. 1 garlic sliced
  12. 1/4 tsp chopped fresh chilli
  13. 3 tsp white vinegar
  14. 2 tsp dry sherry
  15. 2 tsp dark soy sauce
  16. 1 tbs water
  17. 2 tsp sugar
  18. 1 tsp sesame oil
  1. Remove fat and sinew from beef slice beef thinly then cut into fine shreds
  2. Combine beef with oil water and cornflour Cover marinate for 30 minutes
  3. Slice carrot thinly cut into fine strips Heat oil for deep frying in wok add carrot cook until slightly browned remove from wok reserve
  4. Reheat oil add meat cook a few minutes until tender storing gently to separate meat and drain
  5. Heat oil again Sprinkle extra cornflour over the beef Deep fry beef again in a hot oil until brown drain
  6. Add to sauce with reserve carrot reheat throughly before serving immediately
  7. Sauce:
  8. Heat oil in wok add shallot garlic chilli and add remaining ingredients bring to a boil stir in beef and carrot
