Ethiopian Inspired Cabbage,Carrot,Potato Crock-pot Soup (Vegan)

Had nothing but end of the bag veggies in the fridge. I googled a recipe with my ingredients and an Ethiopian dish with cabbage, carrots, potatoes, & spices kept popping up. I was looking for something in the Crock-Pot so I turned it in to a soup. Husband really loved it.

Ingredients

  1. 3-4 large potatoes
  2. 3-5 carrots
  3. 1/2-1 small head of cabbage
  4. 3-4 cloves garlic (minced)
  5. 3 tbs onion powder or 1 med onion (sliced)
  6. 2-3 tbs curry powder
  7. 1-2 Bay leaves
  8. 1 tbs ginger
  9. 1-2 tbs paprika
  10. 1 tbs cumin
  11. water
  12. salt amp pepper

Method

  1. Change Mix all ingredients in the crockpot
  2. Change High: 4-5 hours (til 🥔 amp 🥕 are tender) Low: 5-6 hours
  3. For non vegan cubed meat and broth would be delicious
