Fabulous apple bread

Ingredients

  1. Apple filling
  2. 3 medium granny Smith apples
  3. 3 tbsp granulated sugar
  4. 1 1/2 tsp cinnamon
  5. 2 tsp lemon juice
  6. Bread
  7. 2 1/2 cup bread flour
  8. 1/4 cup granulated sugar
  9. 1 tbsp instant yeast (SAF instant yeast)
  10. 3/4 tsp salt
  11. 1 cup warm water
  12. 2 1/4 tsp vegetable oil
  13. Glaze
  14. 1/3 confectioner sugar
  15. 5 tsp whipping cream (can use milk)
  16. 1/2 tsp vanilla extract
  17. 1 pinch salt
  18. 1 pinch nutmeg

Method

  1. preheat oven to 350°
  2. make the apple filling first:
  3. peelcoreslice the apples very thin and then cut in half
  4. toss with the rest of the ingredients
  5. bake in a pan for 15 minutes remove and set aside
  6. (leave oven on you will use it to bake the braid)
  7. Make the bread:
  8. while filling is baking begin the bread dough
  9. mix the dry ingredients in a large mixing bowl
  10. add the water and oil and mix the dough for 6 minutes with an electric mixer on med speed
  11. spray a clean surface with cooking spray and turn the dough out onto the surface
  12. knead the dough briefly to give it a smooth surface
  13. spray a rolling pin with cooking spray and roll dough into a 12 x 16 (aprox) rectangle
  14. lift onto a greased cooking sheet or baking stone
  15. use a pizza cutter or knife to cut 1 strips into the sides leaving the center third uncut
  16. spread the apple filling down rhe middle third of the dough
  17. fold the strips of dough across the middle criss crossing over the filling
  18. bake at350° for 25 minutes or until golden brown
  19. remove feom oven let cool while mixing the glaze
  20. make the glaze:
  21. whisk together all the ingredients and pour over the entire braid
  22. transfer braid onto a wire cooling rack to keep braid from getting soggy on the bottom from sitting in the pooled glaze
  23. slice and serve (with vanilla icecream and drizzled maple syrup)
