Fried Mac and Cheese Bites…..

Ingredients

  1. 12 oz about 4 cups (cooked) elbow macaroni
  2. 2 tbsp unsalted butter
  3. 2 tbsp all-purpose flour
  4. 1 1/2 cup milk
  5. 1/2 tsp salt
  6. 1/4 tsp black pepper
  7. 1 pinch of cayenne pepper
  8. 2 cup shredded cheddar
  9. 4 oz thinly sliced deli American cheese cut into thin strips
  10. 1 cup shredded mozzarella cheese
  11. 2 large eggs
  12. 1 box (8 oz ) Italian panko bread crumbs
  13. 6 cup vegetable oil – for frying

Method

  1. Bring a large pot of lightly salted water to a boil Add macaroni and cook 7 min Drain
  2. Meanwhile melt butter in a sausepan over medium heat Whisk in flour Cooking until bubbly While whisking add 1and 1/4 cups of milk In a thin stream Season with salt and pepper and cayenne
  3. Bring to a simmer and cook 2 min Remove from heat and mix in 1 cup of the cheddar and American cheese Fold in macaroni in a large bowl
  4. Let it cool slightly then stir in mozzarella and remaing cheddar Spread in a rimned sheet Cover with plastic wrap and refrigerate over night
  5. Change Use a scoop or a spoon about 1/4 cup of the mixture at a time Shape intp 2-3 balls Compressing slightly
  6. Change Whisk eggs with remaining 1/4 cup milk Dip balls in egg mixture then coat in panko
  7. Heat oil in a deep 4- qt Pot to 360°on a deep fry thermometer Fry 6-7 mac and cheese bites at a time Until golden Serve immediately
