Garlic Tomato Basil Soup

I am always looking for ways to cook healthy meals. This recipe is dairy free and is great with some homemade rolls. You can eat this and not feel guilty afterwards ๐Ÿ™‚

Ingredients

  1. 6 garlic cloves minced
  2. 2 red onions minced
  3. 30 Roma tomatoes sliced into thirds
  4. 2 cans fat free chicken broth
  5. 1 1/2 tsp balsamic vinegar
  6. 1 1/2 tsp red pepper flakes
  7. 4 tsp salt
  8. 1 1/2 tsp pepper
  9. 5 tbsp dried basil
  10. 3 tbsp olive oil

Method

  1. Sautee garlic and onions in olive oil for 15 to 20 minutes
  2. Add tomatoes and cook for another 20 to 25 munutes Cover
  3. Add chicken broth balsamic vinegar pepper flakes salt pepper and basil
  4. Stir over low heat and cook for 15 minutes
  5. Using a hand blender blend all ingredients together Once blended cook for another 10 minutes
  6. Add more salt for flavor if needed
