Greek breaded chicken

Really, really good.

Ingredients

  1. 1 lb thin chicken cutlets
  2. marinade
  3. 1/2 cup plain Greek yogurt
  4. 1/2 cup buttermilk
  5. 1 lemon both juice and zest
  6. 2 clove garlic minced
  7. 1 tsp dried oregano
  8. 1 tsp salt
  9. 1/2 tsp pepper
  10. breading
  11. 1 cup panko bread crumbs
  12. 1/4 tsp oregano
  13. 1 pinch garlic powder
  14. 1 pinch salt
  15. 1 pinch pepper

Method

  1. Mix chicken and marinade ingredients in resealable bag and marinate 4 hours or overnight
  2. Preheat oven to 375° Spray cookie sheet with nonstick cooking spray
  3. On a plate combine breading ingredients Remove chicken from marinade (it will retain a slight coating) and press both sides into bread crumb mixture
  4. Bake 20 minutes Turn oven to broil and broil 3 minutes or until top is golden
