Griff's moist and fluffy ginger bread cake

double this recipe for a 9×13 cake pan.

Ingredients

  1. 1/2 cup veg or peanut oil
  2. 1/2 cup sugar
  3. 1/2 cup molasses
  4. 1 tbsp minced crystallized ginger
  5. 1 large egg
  6. 1 1/2 cup flour
  7. 1/2 tbsp ground ginger
  8. 1 tsp cinnamon
  9. 1/2 tsp salt
  10. 1/4 tsp ground cloves
  11. 1/2 cup water
  12. 1/2 tbsp baking soda

Method

  1. preheat oven to 325°F
  2. grease two ceramic baking mugs or cupcake tin
  3. in one bowl mix sugar oil molasses minced ginger and eggs beat until smooth
  4. in another bowl mix flour ground ginger cinnamon salt and cloves
  5. slowly beat flour mix into liquid mix until smooth
  6. in a small sauce pan bring water to a boil and mix in baking soda beat into batter until smooth
  7. split between two baking mugs and bake 40-55 minutes depending on cooking vessel
  8. serve with your favorite ice cream
