Hamburger Soup

Modified recipe from Wheat Belly Cook Book
**Not bad but it is a thin soup so I thickened it with a little coconut flour. I also added extra rosemary to taste.

Ingredients

  1. 2 T EVOO
  2. 1 onion finely chopped
  3. 2 carrots sliced
  4. 1 bell pepper chopped
  5. 2 ribs celery halved lengtgwise abd sliced
  6. 1 lb ground beef
  7. 1 tsp Italian seasoning
  8. 1/4 tsp sea salt
  9. 4 c beef stock
  10. 3 T coconut flour

Method

  1. In large skillet heat oil Cook onion carrots pepper and celery stirring until starts soften
  2. Add beef and cook 3 min until barely pink Add seasoning and salt and cook 1 min
  3. Pour in stock and bring to a boil Reduce heat to medium Stir in coconut flour and simmer for 10 min or until veggies are softened
