Hearty Beef Stroganoff (crock pot)

**The meat is so tender! Great flavor! Can eat this plain or serve with noodles or rice or potates…just add the carbs. I substituted in EVOO and coconut flour and omitted the anise.

  1. 1-1/2 lb beef rump roast trimmed and thinly sliced into 2-inch strips
  2. 1-1/2 tsp black pepper
  3. 1/2 tsp sea salt
  4. 2 tsp safflower oil
  5. 1 yellow onion thinly sliced
  6. 2 cloves garlic minced
  7. 1/2 c dry white wine
  8. 3/4 c low-sodium beef broth
  9. 3 T white whole-wheat flour
  10. 2 T Worcester sauce
  11. 8 oz white mushrooms sliced
  12. 2 bay leaves
  13. 1 piece star anise
  14. 1/2 c sour cream
  1. Season beef with salt and pepper tossing to coat In skillet heat oil Lightly brown meat in batches transferring to crock pot when done
  2. In same skillet add onion and cook until softened Stir in garlic Transfer to crock pot Reduce heat and add wine stirring to scrape up browned bits
  3. In small bowl combine 1/4 c broth and flour until there are no lumps Add to skillet with remaining broth and Worcester sauce Stir constantly until slightly thickened Add to crock pot
  4. Add mushrooms bay leaves and anise to crock pot
  5. Cover crock pot and cook 4 hours on high To serve remove bay leaves and anise Mix in sour cream
