Italian Beef Enchiladas

  1. 1 tortilla
  2. 3 oz ground beef
  3. 3/4 cup tomato sauce
  4. 1/4 cup onion
  5. 1/4 cup mozzerella cheese
  6. 1/8 cup mushroom
  7. 2 oz cream cheese
  8. 1 tbsp grated parmesan cheese
  9. 1/2 tsp garlic powder
  10. 1/2 tsp basil
  11. 1/4 tsp thyme
  12. 1/4 tsp ground black pepper
  13. 1/8 tsp salt
  1. Preheat oven to 350°F
  2. Place mushrooms and onion in skillet on medium-high heat with 1 tsp butter and sautée for 3-4 minutes
  3. Combine sautée with ground beef and brown Season with salt black pepper garlic powder basil and thyme Mix
  4. Add 1/2 of the tomato sauce and 2 tsp parmesan cheese to ground beef and combine
  5. Spread cream cheese over middle of tortilla shell Cover with ground beef mix Wrap with ends tucked in
  6. Spray/butter inside of baking pan and place enchilada inside Cover with remaining tomato sauce tsp parmesan cheese and mozzerella cheese
  7. Cover with aluminum foil and bake for 20 minutes
