Italian Bread Salad: Panzanella

A refreshing salad: Tomatoes, onions, cucumber and bread cubes are seasoned with basil balsamic dressing.


  1. 350 g italian bread ciabatta or french bread cut into cubes
  2. 2 large tomatoes
  3. 2 cucumbers sliced
  4. 1/2 cup red onion sliced
  5. 1/2 cup olive oil
  6. 2 tablespoons balsamic vinegar
  7. 10 basil leaves shredded
  8. salt
  9. black pepper


  1. Trim the tomatoes and cut each into 8 wedges
  2. In a large bowl mix together tomatoes wedges cucumber and onion slices and bread cubes
  3. For the dressing in a small bowl mix the balsamic vinegar olive oil basil then salt and pepper
  4. Pour the dressing on the vegetable bowl toss well and serve
