Jamaican Cocktail Bread Pudding

As a child i never like bread pudding, but when i got older putting a twist on a old favorite has now made it my favorite

Ingredients

  1. 12 slice Bread (Cut in small cubes)
  2. 2 tbsp ground cinnamon
  3. 1 can fruit cocktail mix (drained)
  4. Custard
  5. 1 tsp ground nutmeg
  6. 2 quart Cow #39 s Milk
  7. 5 medium eggs
  8. 2 1/2 cup granulated sugar
  9. 1 can evaporated milk
  10. 1 2/3 tbsp vanilla
  11. 1/2 cup rum or rum cream
  12. 1/2 cup sherry
  13. 1/2 tsp salt
  14. Glaze
  15. 1/2 cup orange juice
  16. 1 tbsp butter
  17. 2 tbsp sugar
  18. 1/2 oz rum (optional)

Method

  1. Heat oven at 350 ° F
  2. Grease a med bread pan with butter
  3. Combine bread cubes cocktail mix and cinnamon in a container
  4. Place coated cubes and fruits in Greased pan
  5. Heat and cool milk then mix with all other ingredients for custard
  6. Pour milk mixture over bread cubes
  7. Allow to rest for 15-20mins so cubes may absorb the custard
  8. Bake for 45-50mins
  9. Combine ingredients for glaze over flame in a small saucepan until slightly thicken
  10. Change Take pudding from oven brush with glaze and put to cool
  11. ENJOY with a scoop of your favorite ice cream 🙂
