lighter zuppa toscana soup


  1. 4 cup low sodium chicken broth
  2. 32 oz fat free half and half
  3. 2 cup chopped kale
  4. 1 medium onion chopped
  5. 3 each italian turkey sausage
  6. 4 medium potatoes diced
  7. 2 tbsp corn starch


  1. remove sausage from casing and brown set aside
  2. sautee diced onion and combine onion and sausage to a stock pot
  3. pour in chicken broth and add diced potatoes Boil till potatoes are tender
  4. Use a potato masher to mash potatoes a bit for texture
  5. add kale and simmer till kale is tender add garlic powder salt or pepper to taste if desired
  6. add half and half reserving 1 cup to combine with cornstarch and add slurry to soup stirring till heated thrudo not boil
