Mike's Grilled BBQ Chicken Strips

Three of my youngest students [6 years old] wanted to learn how to both brine and grill meat today. Listed is their easy grilled chicken recipe but they also grilled steaks and ribs. If interested, you can find those recipes and directions listed under my profile. ☺


  1. ● For The Proteins
  2. 2 lbs Fresh Chicken Strips fat trimmed
  3. ● For The Basic Chicken Brine keep at 38° – optional
  4. 1/2 Cup Table Salt
  5. 1 tsp Garlic Powder
  6. 1 tsp Onion Powder
  7. 1/2 Cup Ground Black Pepper
  8. as needed Ice Cubes
  9. ● For The Chicken Marinade
  10. 4 Drops Liquid Smoke not extract
  11. 1/2 tsp Granulated Garlic Powder
  12. 1/2 tsp Granulated Onion Powder
  13. 1/2 Fresh Ground Black Pepper
  14. 1/2 tsp Cracked Sea Salt
  15. 1/2 tsp Ground Cumin
  16. as needed Olive Oil
  17. 1 LG Ziplock Bag
  18. ● For The BBQ Sauce
  19. as needed Your Choice


  1. Change Start with 2 pounds of fresh – not frozen chicken strips
  2. Change Rinse strips and cut any fat from chicken
  3. Change Brine strips for one hour for added moisture in chicken optional step
  4. Change Pat strips dry and add to a Ziplock Bag Add all Marinade items and massage well Refrigerate for 1/2 hour
  5. Change Grill thin chicken strips for 4 to 5 minutes Add sauce at finish
  6. Change Your choice but Heinz Jack Daniels and Sweet Baby Rays especially sweet baby rays are all great BBQ sauce brands
  7. Change Grilled Porterhouse steak pictured See directions under my profile

  9. Change Serve BBQ chicken over mashed potatoes
