Mike's Soft Boiled Egg Vietnamese Banh Mi Sandwiches

Feel free to add beef, pork, pâté or chicken to these sandwiches. All are great options!

Ingredients

  1. Vietnamese Banh Mi Slaw as needed :
  2. Fresh Cabbage thin sliced
  3. Fresh Carrots thin sliced
  4. Cucumber thin sliced
  5. Diakon Radishes thin sliced
  6. Green Onions sliced
  7. Thai Chilies fine chop
  8. Thai Basil Leaves left whole
  9. Purple Onions thin sliced
  10. Sprouts
  11. Fresh Cracked Black Pepper
  12. 1/2 tsp Lemon Grass fine chop
  13. 1/2 tsp Garlic fine chopped
  14. 1/2 tsp Ginger fine chop
  15. 1 Thick Lime Wedge juiced reserves for serving
  16. 1/2 tsp Granulated Sugar
  17. 3 dash Quality Fish Sauce
  18. 3 dash White Or Rice Vinager
  19. 1 Splash Water
  20. Bread:
  21. 2 large Sturdy Baguette Buns halved
  22. Melted Butter
  23. Soft Boiled Eggs:
  24. 4 large Egglands Best Eggs
  25. Boiling Water
  26. Ice Water
  27. 1 tsp Salt
  28. Toppers amp Garnishments:
  29. Siracha Sauce
  30. Fresh Avocado
  31. Lime Wedges
  32. Fresh Cilantro
  33. Fresh Jalapeños sliced
  34. Fresh Mint
  35. Mayonnaise
  36. Sea Salt

Method

  1. Change Heres about all youll need Carrots cucumber diakon radish and purple onions not pictured in photo

  5. Change Place Siracha Sauce on bread Pile your slaw mixture on bread Crack your eggs open 2 per sandwich and pour on your yolks on top Scoop out your remaining egg whites with a spoon and place on slaw mixture as well Sprinkle on fresh cracked black pepper Place fresh Cilantro on top
