Mike's Two Way Grilled Chicken Skewers

As you can probably tell – I seriously over ordered on skinless chicken breasts this month. With that, my students were forced to get really creative with them. All in all, they ended up cooking, baking or grilling 16 pounds of chicken. While all of their recipes were excellent, I enjoyed these two the most for flavor, simplicity and absolute ease. Great work, photos and documentation kiddos! Delicious! Oh, and Joseph? Do thank your parents again for not suing me for your hellatious lower arm grill burn. Ingredients

  1. ● For The Protein
  2. 4 Pounds Fresh Fat Free Chicken Breasts brined then cubed
  3. ● For The Brine
  4. as needed Water amp Ice
  5. 1/2 Cup Salt
  6. 1/2 Cup Granulated Sugar
  7. 1 tbsp Granulated Garlic Powder
  8. 1 tbsp Granulated Onion Powder
  9. ● For The Siriacha Skewers equal parts sirichas
  10. as needed Siriacha Hot Sauce
  11. as needed Siriacha Garlic Chili Sauce
  12. as needed Fresh Ground Black Pepper
  13. 1 tbsp Dried Cilantro
  14. 1 tbsp Dried Parsley
  15. 1 tbsp Granulated Onion Powder
  16. ● For The Turkish Scewers
  17. as needed Garlic Olive Oil enough to coat chicken
  18. 4 Drops Liquid Smoke not extract
  19. 1/2 tsp Dried Oregano
  20. 1/4 tsp Dried Dill Weed
  21. 1/2 tsp Dried Chives
  22. 1/2 tsp Fresh Ground Black Pepper
  23. 1/2 tsp Granulated Garlic Powder
  24. 1/2 tsp Granulated Onion Powder
  25. 1/2 tsp Ground Cumin
  26. 1/2 tsp Dried Italian Seasoning
  27. 1/2 tsp Red Pepper Flakes
  28. 1 tbsp Dried Cilantro
  29. 1 tbsp Dried Parsley
  30. 1/2 tsp Paprika
  31. ● For The Breads olive oil coated amp grilled
  32. as needed 6 quot Pita Bread
  33. as needed 6 quot Garlic Naan Bread
  34. as needed 6 quot Flour Tortillas
  35. ● For The Vegetable Scewers amp Bread Toppings as needed
  36. Firm Tomatoes sliced amp halved – for your bread
  37. Thin 6 quot Cucumber Spears for your bread topping
  38. Fine Shreadded Lettuce for your bread topping
  39. Red Onions chop in 1 quot squares
  40. White Onions chop in 1 quot squares
  41. Bell Peppers chop in 1 quot squares
  42. Black Olives for the bread topping
  43. Brown Or White Mushrooms for bread topping
  44. Lemon Wedges
  45. Green Onions thin lengths for your bread topping
  46. Fresh Cilantro Leaves for your bread topping
  47. Leaves Fresh Cilantro for you bread topping
  48. Leaves Fresh Parsley for your bread topping
  49. ● For The Sides/Options as needed
  50. Siricha Sauces hot and garlic
  51. Garlic Olive Oil

Method

  1. Change Brine four one pound fat free chicken breasts in 35° ice water
  2. Change Add 1/2 cup salt 1/2 cup sugar 1 tbsp granulated garlic and 1 tbsp granulated onion for 2 hours
  3. Change Cut breasts into 15 even cubes for even grilling
  4. Change Separate chicken cubes evenly in to two large Ziplock bags and season Marinate both for 1 hour or longer Reserve any oils and Siriacha Chili mixtures for grilling/coating later
  5. Change Siriacha Hot Chili Sauce and Siriacha Chili Garlic Sauce pictured
  6. Chop all desired vegetables
  7. Change Soak wooden skewers in water for 5 minutes Or you can use metal skewers Thread chicken on skewers with a 25 onion slice in between each chicken cube for flavor and even grilling
  8. Change Grill for 7 to 10 minutes or until juices run clear and make sure you get a good char on each Dont over grill tho Coat with reserved Siriachas and Garlic olive oil as they grill Know that the Siriacha Skewers will be much hotter with the additional sauce at finish
  9. Change Feel free to grill your vegetables as well for 7 to 10 minutes on indirect heat Just lightly coat with olive oil and listed seasonings if so
  10. Change Grill breads until charred Just coat lightly with olive oil before
  11. Change Wrap chicken up in 6Naan or 6 flour tortillas
  12. Change Serve on grilled Naan bread or flour tortillas Construct with the vegetables you and your guests desire Enjoy! Especially with ice cold beers in thick frosty mugs!
