Mini Apple Banana Walnut Bread Muffins

  1. muffin batter:
  2. 2 cup apples (peeled diced and spritzed with lemon )
  3. 4 medium over ripe bananas
  4. 1 cup granulated sugar
  5. 2 large eggs
  6. 3 tbsp melted cooled butter
  7. 3 tbsp soured milk
  8. 1/2 tbsp vanilla extract
  9. 2 cup all purpose flour
  10. 1/2 tsp baking powder
  11. 1 tsp baking soda
  12. 1 tsp ground cinnamon
  13. 1/2 tsp ground nutmeg
  14. 2 dash ground ginger
  15. 1/2 cup chopped walnut
  16. Topping:
  17. 1/4 cup apple (diced peeled and spritzed with lemon juice)
  18. 2 1/2 tbsp granulated sugar
  19. 1/2 tbsp ground cinnamon
  20. 1/4 cup chopped walnuts


  1. Preheat oven to 350ร‚ยฐF
  2. Muffins:
  3. Change In a large bowl wisk together flour baking soda baking powder nutmeg cinnamon and ginger Set aside
  4. Change In a medium bowl mash banana with sugar and butter
  5. Change Wisk in egg vanilla and milk
  6. Change Add wet to dry just until incorporated Do not overmix
  7. Change Fold in apples and walnuts
  8. Change Spray 48 mini muffin cups with nonstick spray Inside and on top
  9. Change Fill muffin cups to the rim with batter
  10. Change Topping: in a small bowl combine sugar and cinnamon Wisk with fork
  11. Change Place 3 or so pieces diced apple on top of each muffin
  12. Sprinkle on a bit of walnut
  13. Change Sprinkle cinnamon sugar mix over entire muffin top
  14. Change Bake in oven for 12-14 minutes or until toothpick comes out clean
  15. Change Let stand 5 minutes then transfer to wire rack for cooling
  16. Serve and enjoy! ๐Ÿ™‚
  17. These are great with a cream cheese drizzle or a sweet cream cheese dip
  18. Makes about 48 mini muffins
