Olive Gardens Chicken & Gnocci Soup

i adapted this recipe from bly the ponytail parades. it was close so i tweaked a tad and 3 out 4 said it was spot on. i never had at olive garden so i dont know what its supposed to taste like but omg! it was still oh soooo good!


  1. 4 tbsp salted butter
  2. 1 tbsp olive oil
  3. 1 1/4 cup diced white onion
  4. 2 clove minced garlic
  5. 1/4 cup packed all purpose flour
  6. 1/4 tsp garlic powder
  7. 1 quart half and half
  8. 1 3/4 cup water
  9. 2 1/4 tsp powdered chicken boullion
  10. 1/2 tsp dried thyme (slightly heaping)
  11. 1/2 tsp dried parsely flakes (slightly heaping)
  12. 1/4 tsp ground nutmeg (slightly heaping)
  13. 1 1/4 cup shredded carrots
  14. 1 1/4 cup chopped fresh baby spinach leaves
  15. 1 1/4 cup small cubed boneless skinless chicken breast
  16. 1 lb gnocci thawed or fresh
  17. 1 pinch salt and pepper to taste


  1. in a large pot melt butter with oil on medium-medium high heat
  2. Change add chickenonion and minced garlic
  3. Change cook until chicken is no longer pink and onion is translucent
  4. Change slowly add flour stirring constantly
  5. Change one combined and mixed well slowly stir in half and half wisking continuasly
  6. continue cooking and stirring until its starting to thicken
  7. in a bowl combine all seasonings the powdered boullion and the water wisk well
  8. Change add seasoning water to pot and mix well
  9. Change stir in spinach and carrots
  10. Change add gnocci and salt and pepper to taste
  11. bring to a slow rolling boil stirring often
  12. continue to boil until gnocci is fully cooked
  13. let stand at least 10 minutes stirring every few minutes it will thicken more as it cools
  14. Change serve hot with fresh grated parmesan or romano cheese
  15. Change this served 4 heavy eaters with leftovers for 2 more servings served with buttered french bread
  16. Change I used fresh gnocci from a recipe here on the app u can find it in my profile under favorites
