Potato cakes with corned beef and cheese

  1. 6-7 small-med potatoes
  2. 1/4 onion diced
  3. 3/4 can corned beef
  4. 2 large eggs
  5. 1/2 c flour
  6. 1 c shredded cheese
  7. 1 Tbsp minced garlic
  8. salt
  9. pepper
  10. 1/2 tsp celery flakes
  11. cooking oil (vegetable)
  1. Clean peel and shred potatoes and refrigerate for approximately 1/2 hr
  2. Mix in diced onions corned beef and shredded cheese
  3. In a separate bowl beat eggs salt pepper garlic and celery flakes
  4. Mix all ingredients together adding flour until a thick mix is achieved
  5. Heat oil in a deep pan (Oil should be about 1/2 deep)
  6. Place dollops of the mixture in the oil
  7. Fry a few minutes per side until browned spooning oil over each one as they cook (This ensures that the insides are cooked through
  8. Top the patties with a slice of cheese sour cream and chives or my favorite salsa con queso
