Salt rise bread


  1. 4 tablespoons white cornmeal
  2. 2 tablespoons sugar
  3. 11/2 teaspoons salt
  4. 1 cup milk
  5. 1 cup warm potato water
  6. 2 tablespoons lard
  7. 51/2 cups flour


  1. The afternoon before baking scald milk add 1/2 the sugar all the salt stir in cornmeal
  2. Place in warm place overnight in pan of warm watet
  3. In the morning add warm potato water rest of sugar shortening and 2 cups of flour
  4. Set in pan of warm water let rise
  5. Turn into warm mixing bowl slowly add rest of flour and knead by hand for 10 brush with melted butter minutes place in greased loaf pan let rise till 21/2 times its size
  6. Bake at 375 for 10 minutes then turn down to 350 for 25 minutes
