Silver Cake with lemon and chocolate chip adaptations

made this yesterday for a black and white cake.

Ingredients

  1. 3 cup cake flour -sifted
  2. 3 1/2 tsp baking powder
  3. 1/2 cup butter
  4. 1/2 cup milk and 1/2 cup water mixed
  5. 1 1/2 cup sugar
  6. 1 tsp vanilla extract for (lemon cake use 1 1/2 tsp lemon extract)
  7. 4 egg whites beaten stiffly
  8. 1/2 cup mini chocolate chips (for chocolate chip cake)

Method

  1. Add baking powder to the shifted cake flour and sift together 3 times
  2. Cut butter into pieces and blend with flour using pastry blender
  3. Add milk and water mixture sugar and flavoring
  4. Beat until smooth
  5. Fold in egg whites
  6. Preheat oven to 375°F
  7. Bake in greased and floured 9×13 inch pan for 25-30 minutes
