Soothing Asian Soup

I made this when I wasn t feeling very well. It feels warm and cozy to me. I would think you could add what ever ingredients you prefer the point is light and simple.


  1. 4 1/2 cups chicken broth – homemade or canned
  2. 3-4 thick slices of fresh ginger
  3. 1 1/2 cups sliced mushrooms any type you like
  4. 1 1/2 cups thinly sliced spinach
  5. Splash toasted sesame seed oil
  6. Sliced green onions optional


  1. Bring the chicken broth to a low simmer over med to med-high heat depending on your stove
  2. Add the ginger slices and simmer for 15 minutes Longer if you prefer a stronger ginger flavor
  3. Add the mushrooms and simmer for 2 minutes
  4. Add the spinach and splash of sesame oil and simmer for 1 more minute
  5. Serve with your green onions if desired
