Southwest Chorizo Dressing

Ingredients

  1. 2 tbsp olive oil extra virgin
  2. 1 lb local butcher shop quality chorizo
  3. 1 onion chopped
  4. 2 stick celery diced
  5. 2 carrot diced
  6. 2 colored bell peppers chopped
  7. salt and pepper
  8. tsp ground cumin
  9. 1 tsp minced garlic
  10. 1 tsp red chili flakes(optional)
  11. 2 jalapeños seeded and minced(optional)
  12. 1/2 bunch cilantro minced
  13. 8 oz mushrooms
  14. 6 cup cornbread crumbs
  15. 4 cup bread crumbs
  16. 4 eggs
  17. 4 cup chicken broth

Method

  1. Heat oil and add chorizo Cook until done
  2. Add onion celery and carrots Cook until soft
  3. Add peppers and mushrooms with seasonings Cook 2 minutes and remove from heat
  4. Change Put cooked ingredients into a mixing bowl and stir in egg
  5. Change Add bread crumbs and broth Stir and pour into a oiled or buttered 9 by 13 baking pan
  6. Bake in a 350° F oven for 45 to Minutes until slightly crispy on top
