Spiced Apple Flatbread w/Citrus Wine Drizzle

It s like a crispy, handheld apple pie. If you don t have/want wine, you can just use water in the crust and drizzle with honey instead of the citrus wine drizzle.

Ingredients

  1. 1 Zested Lemon
  2. Flatbread
  3. 3/4 cup Warm Riesling (or other medium dry wine)
  4. 1/4 cup Warm Water
  5. 1 1/2 cup All-Purpose Flour
  6. 1 cup Bread Flour
  7. 2 tbsp Granulated Sugar
  8. 1 tbsp Honey
  9. 1 tsp Salt
  10. 1/4 tsp Ground Cinnamon
  11. 1 tbsp RapidRise Yeast
  12. 1/4 tsp Vanilla Extract
  13. Topping
  14. 8 Granny Smith Apples (peeled/cored)
  15. 1/4 cup Salted Butter
  16. 2 tbsp Granulated Sugar
  17. 1 tsp Ground Ginger
  18. 1/2 tsp Ground Allspice
  19. 1/2 tsp Ground Cinnamon
  20. 1 Zested Lemon
  21. Citrus Wine Drizzle
  22. 1 3/4 cup Riesling (or other medium dry wine)
  23. 1/2 cup Granulated Sugar
  24. 1 Juiced Lemon

Method

  1. Using a bread machine pour all flatbread ingredients in order into mixer and run on dough setting If not using a bread machine mix ingredients by hand Knead for 15 minutes and let rise for 90 minutes
  2. Preheat oven to 400°F
  3. Slice apples into 1/4-inch slices Transfer to large skillet along with remaining filling ingredients Cook over medium-high heat for 10 minutes or until apples soften Then transfer to separate bowl and let cool
  4. In the same skillet apples were cooked in add citrus wine drizzle ingredients and cook over high heat for 10 minutes or until reduced by half Then transfer to separate bowl and refrigerate until fully cooled
  5. When oven is heated roll out dough onto unfloured surface The dough is more like a cracker dough so it shouldnt stick Divide in half and roll each out thinly into roughly 9×9-inch squares Put each on a separate baking sheet and place in oven to blind bake for 10 minutes or until crusts start to brown slightly
  6. Remove crusts from oven and divide apple topping in half among the two Return to 400°F oven and bake for 10 more minutes
  7. Remove flatbreads and sprinkle zest of one lemon evenly among the tops of both Cut each into 6 equal pieces
  8. When plated drizzle desired amount of citrus wine drizzle on top of each piece
