Spinach Artichoke Soup

I love Spinach Artichoke Dip and decided it would make an excellent soup. The family loves it. We serve it with pan toasted bread seasoned with Garlic Butter.

Ingredients

  1. 16 oz Fresh Spinach
  2. 2 Cups Broth (Chicken Beef or Vegetable)
  3. 14 oz Can Artichokes drained
  4. 3 Tbsp Butter
  5. 1 Large Onion
  6. 3 Tbsp Flour
  7. 2 1/2 Cups Milk
  8. 2 Tbsp Lemon Juice
  9. 1 Cup Grated Parmesean
  10. to taste Salt and pepper

Method

  1. Change Individually Roughly chop Fresh Spinach Onion and Artichokes in Food Processor or by hand
  2. In a large pot melt butter Saute onions in melted butter until they are soft Careful not to scorch them
  3. Add flour and stir until smooth Heat thoroughly to allow the flour to absorb the flavor
  4. Gradually whisk in the milk Heat until thickened
  5. Stir in Artichokes Spinach Lemon Juice Parmesan Cheese Broth and season to taste
  6. Bring to a slow simmer for about 10 minutes Do NOT boil
