Sweet Corn Bread

A family favorite from many years past!

Ingredients

  1. 1/4 lb butter
  2. 1 cup sugar
  3. 2 medium eggs
  4. 1 cup Corn meal
  5. 1 1/2 cup flour
  6. 2 tsp baking powder
  7. 1/2 tsp salt
  8. 1 1/2 cup Milk

Method

  1. Preheat oven to 375°
  2. Cream butter and sugar together
  3. Add eggs and corn meal
  4. In a separate bowl stir dry ingredients together (sift if you prefer but Im lazy so I skip that step)
  5. Add 1/3 of the flour mixture to the corn meal mixture and combine
  6. Add 1/2 cup of milk and combine
  7. Repeat above steps until all flour and milk has been added
  8. Pour into greased 7 X 11 inch pan and bake for 40 minutes or until toothpick comes out dry
  9. Can also be baked in a corn bread pan or muffin tins It will yield 20 – 24 muffins
