Sweet Potato Alfredo Tortellini with Kielbasa

  1. 1 packages cheese toretellini
  2. 1 sweet potato
  3. 1 lb spinach
  4. 1 pints Grape tomatoes
  5. 2 tbsp Brown butter
  6. 2 tbsp Flour
  7. 1 cup Milk
  8. 1/2 cup Parmesan cheese
  9. 1 as needed Salt and pepper
  10. 1/2 tsp Cayenne pepper
  11. 1 packages Kielbasa (turkey or beef)
  1. Peel and cut sweet potato into cubes Add to boiling water and cook until fork tender Add to blender until smooth
  2. Boil water and add tortellini cook according to package directions
  3. Melt butter in medium sauce pan and add flour to form a rue
  4. Add milk and wish over medium low heat until thickened
  5. Cut up kielbasa and sauté in olive oil until browned over medium heat
  6. Add blended sweet potato and cheese and stir if sauce is too thick add water to thin out Season with salt pepper and cayenne Leave on low heat stirring occasionally
  7. Add grape tomatoes and spinach to kielbasa and lower heat Cook until spinach is wilted
  8. Add sauce to kielbasa mixture and combine Spoon over tortellini and garnish with cheese as desired
